Vegetable Kothu Parotta / Minced Vegetable Parotta Recipe


Kothu Parotta is a popular delicacy of Tamil Nadu. Kothu Parotta is a famous road side food available in street food shops. Different variations of kothu parotta are served in this region of south India like vegetable kothu parotta,egg kothu parotta, chicken kothu parotta, mutton kothu parotta etc. Today I am sharing vegetable kothu parotta recipe which is simple and easy to cook.Veg-Kothu
Ingredients :

• 4 Parotta / Parathas
• 2 cup mixed Vegetables (Carrot, beans, capsicum and peas)
• 2 medium Onion (Finely chopped)
• 1 Tomato (Finely chopped)
• 1 tsp Ginger Garlic paste
• 2 Green Chilies (minced)
• 1/2 tsp Cumin seeds
• 1/4 tsp Turmeric powder
• 1/2 tsp Red Chili powder
• 1 tsp Coriander powder
• Few Curry leaves
• Salt to taste
• 1 tbsp Oil
• Coriander leaves for garnishing

Method :

  • Slice the vegetables into fine pieces.
  • Shred the parottas into pieces or long strips.
  • Heat oil in a pan. Add curry leaves, cumin seeds and stir till they splutter.
  • Add chopped onions, ginger garlic paste and cook till the raw aroma of garlic disappears.
  • Add tomato and cook till tomatoes become soft.
  • Now add the vegetables and stir for a minute. Sprinkle some water and cover the pan with a lid and cook on medium flame till the vegetables are done.
  • Now add all the spices and stir for a minute.
  • Add shredded parottas and mix well. Make sure spices coat the parottas well.
  • Cook for 2 minutes. Remove from flame.
  • Garnish with fresh coriander leaves.
  • Vegetable Kothu Parotta is ready to be served with raita or it can be served without any accompaniment.
