Sambar Recipe | How to make sambar


Sambar is very popular in South Indian meals. Sambar is served as a side dish for idli, dosa, vada but sambar is usually served with steamed rice as a main course.

Sambar is very nutritious as it is loaded with lots of vegetables. Generally we put drumsticks, eggplants, pumpkin, bottle gourd, tomatoes, shallots etc. The choice of vegetables is entirely yours. 


Ingredients :

  • 3/4 cup toovar dal (arhar)
  • 2 drumsticks , cut into long pieces
  • 1/2 cup bottle gourd cut into cubes (lauki)
  • 1 carrot cut into cubes
  • 1 tsp mustard seeds ( rai)
  • 6 to 7 curry leaves (kadi patta)
  • a pinch of asafoetida (hing)
  • 1/2 cup chopped tomatoes
  • 8 small shallots (madras onions)
  • 2 1/2 tbsp tamarind (imli) pulp
  • 3 tbsp sambhar powder
  • 1 tsp chilli powder
  • 1 tsp turmeric powder (haldi)
  • salt to taste
  • 2 tbsp oil
  • 2 tbsp oil
  • 2 tbsp finely chopped coriander (dhania)

Method :

  • Wash the toovar dal thoroughly and pressure cook with 2 cups of water for 3 whistles.
  • In the mean time boil drumsticks, bottles gourd, carrot in a deep sauce pan till the vegetables are soft and keep aside.
  • When the pressure is released blend the dal to smooth with the back of the spoon or with hand blender and keep aside.
  • Now heat oil in a pan and add the mustard seeds, curry leaves and asafoetida and saut√© on a medium flame for a few seconds.
  • Add the tomatoes, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  • Now add the cooked bottle gourd,drumstick and carrot, shallots, tamarind pulp, salt to taste, sambhar masala, chilli powder, turmeric powder, mix well and allow to cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  • Add the cooked dal and 3/4 cup of water, mix well and cook for another 2-3 minutes while stirring occasionally.
  • Switch off the flame. Add coriander, mix well and serve hot with idli, dosa, vada or steamed rice.
