Tamarind rice

Puliyogare / Tamarind or Puliyodharai rice is traditionally made using steamed or boiled rice mixed with tamarind paste and puliyogare masala. This tangy rice is also served as a starter. You can also use the left over rice to pep it up. Puliyogare is a mainstay in most south Indian festivals, lunch and dinner. It is also offered as prasadam in temples across south India. It is also known as hulianna in some parts of Karnataka and pulihora in Andhra Pradesh.

Ingredients :

For Puliyogare Masala :
• 10 dried red chilies
• 1 tbsp Chana dal
• 1 tbsp Urad dal
• 1 tbsp Toor dal
• 1 tbsp Coriander seeds
• 1 tsp Cumin seeds
• 1/2 tbsp Sesame seeds
• 1/4 tsp Black Peppercorns
• 1/4 tsp Mustard seeds
• 1/4 tsp Methi seeds
• 1/4 tsp Turmeric powder
• Pinch of Hing
• 1 tbsp dry Coconut (grated)

For Puliyogare :
• 1/2 tsp Mustard seeds
• Few Curry leaves
• 2 tbsp Peanuts
• Tamarind, small ball soaked in water or 1 tbsp ready-made tamarind paste
• 2 cups Rice

Method :

For Puliyogare Masala

  • Dry roast red chilies, toor dal, chana dal, methi seeds and peppercorns in a pan over medium heat.
  • When slightly brown, add urad dal, coriander seeds and cumin seeds till they are uniformly brown (do not burn). Set aside.
  • Roast sesame seeds and mustard seeds separately until they splutter.
  • Turn off flame and add the grated coconut.
  • When cool, grind to a powder.

For Puliyogare

  • Cook rice and set aside.
  • Heat a tbsp of oil in a pan and add mustard seeds till they splutter.
  • Add peanuts and roast till brown.
  • Add curry leaves and stir for few seconds.
  • Add tamarind paste and cook till it loses the raw taste.
  • Add the ground puliyogare masala and stir.
  • Add rice and stir so that every grain is covered in masala.
  • Puliyogare / Tamarind rice is ready to be served with a cucumber raita.
