When I was working I went to Bangalore for official work and one of our colleague invited us for lunch. At that time I got a chance to taste and learn how to make curd rice from her mother. From there I also got to know that every South Indian meal never ends up without curd rice, because it balance the effect of other spicy dishes. Lets start with the simple curd rice recipe….

Ingredients :

  • 1 1/2 cups Rice (Cooked)
  • 1 1/2 cups fresh curds (dahi)
  • 1/2 cup Milk (warm)
  • 1 tbsp Oil
  • 1 tsp Mustard seeds ( rai / sarson)
  • 1 tbsp Urad dal (split black lentils)
  • 4 to 6 Curry leaves (kadi patta)
  • 1 to 2 Green chillies , slit green chillies
  • A pinch of Asafoetida (hing)
  • Salt to taste

Method :

  • Combine the rice and milk together in a bowl.
  • When the mixture cool. Now add curd to it and mix well. Keep aside.
  • Heat the oil in a non-stick pan and add the mustard seeds.
  • When the seeds crackle, add the urad dal, curry leaves and green chillies and sauté on a medium flame for 1 minute, while stirring continuously.
  • Add the asafoetida. Now transfer this tampering to prepared curd-rice mixture, mix well.
  • Add salt to taste and mix well.
  • Garnish with chopped coriander leaves and your curd rice is ready to be served.
