
Mathri / Mathi is a Rajasthani snack. Mathris are served with a hot cup of tea as a evening snack. In north India it is also served on Holi festival.
Ingredients :
• 2 cup Maida (refined flour)
• 1/4 cup Semolina (Sooji / Rava)
• Salt to taste
• 1/2 tsp whole Black Peppercorns (coarsely cracked)
• 1/4 tsp Baking Powder
• 2 tbsp Curd / Plain Yogurt
• Little warm Water
• 4 tbsp melted Ghee / Oil
• Ghee / Oil for deep frying
Method :
- Mix the flour, salt ,cracked pepper and baking powder in a bowl.
- Add the ghee and rub between your palms until it takes the form of breadcrumbs.
- Combine the curd with water and make dough using this liquid.
- Cover with the damp cloth and set aside for 30 minutes.
- Divide the dough into small balls and roll out the balls into 2 inch circle.
- Prick each mathri with a fork in 5 to 6 places, so the mathris do not puff when frying.
- Heat the oil in a kadai. Fry the rolled mathris in a batch over low medium heat.
- Do not allow the rounds to become brown, they should remain pale gold in color.
- Take out the mathris on absorbent paper with the help of strainer.
- Repeat the process for remaining mathris.
- Allow to cool to room temperature.
- Mathris / mathi are ready to be served with a hot cup of tea.
- When cool store in a airtight container.
