Here is a recipe for spicy mango pickle. If you are a pickle lover, you are going to love this pickle.
Ingredients:
- 2 Kg Mango
- 3 teaspoon Methidana(Fenugreek seeds) roasted and crushed into powder
- 4 teaspoon Chilli powder
- 6 teaspoon Mustard powder
- 6 teaspoon Fennel seeds(Saunf)
- 2 teaspoon Onion seeds(Kalunji)
- 2 teaspoon Turmeric powder
- 9 teaspoon Garam Masala powder
- 1 small piece Hing
- 1/2 teaspoon Ajwayan(Carom seeds)
- 1/2 litre Mustard Oil
- 6 teaspoon of salt(for masala) and 12 teaspoon of salt for mangoes)
Method:
- Rinse and wipe the mangoes well with cotton towel. Chop the mangoes, add 12 teaspoon of salt and keep aside.
- Heat 4 tablespoon of oil in a pan and add hing, fry till it gets golden brown.
- Take out hing from oil and make powder of fried hing.
- Add this hing and all masalas into oil.
- Now add mangoes to this masala and mix well so that the spices uniformly coat the mango pieces.
- Store mango pickle in a jar and keep in sun for 3-4 days.
- Add the remaining mustard oil till it covers the mangoes upto 1/2 inch or 1.
- Stir and mix well.
- Store the pickle in a dry and cool place for one week.
- Have the mango pickle with your favourite Indian dishes.
