Everyone faces a time, every now and then, that you look inside the refrigerator and see variety of vegetables but none of them in enough quantity to make a dish. Dishes like vegetable medley korma are a savour in these conditions. A variety of vegetables mixed in perfect harmony result in a dish that is so finger leaking good that it will leave your guest wanting more.

Ingredients :
- 100 gms Carrot
- 100 gms Beans
- 100 gms Potato
- 100 gms Cauliflower
- 1 Onion
- 1 cup Tomato puree
- 2 tsp Ginger Garlic paste
- 1 tsp Mustard seeds
- 10-12 Kari Patta
- 1/2 tsp Turmeric powder
- 2 tsp Coriander powder
- 1/2 tsp Red Chilli powder
- 1 cup Coconut milk
- 2 cup water
- Salt to taste
- 1 tbsp oil
- Coriander leaves for garnishing
Method :
- Rinse and cut the vegetables into 1 inch pieces.
- 2 Grind the onion in smooth paste.
- 3. Heat oil in a pan add mustard seeds, kari patta and saute for one minute.
- 4. Add onion paste, ginger garlic paste and cook till it becomes golden brown.
- 5. Add all the spices and tomato puree, cook for 2 minutes at low flame.
- 6. Now add the chopped vegetables and mix well so that all the spices uniformly coat the vegetables.
- 7. Saute the vegetables for 5 minutes , then add 1 cup water, coconut milk and mix well.
- 8. Cook on low flame for 5 minutes or till the vegetables are done.
- 9. Garnish with fresh coriander leaves and serve hot with chapattis, naan or rice.
