
Fried rice is a dish of steamed rice that has been stir fried in a wok and mixed with other ingredients like egg, vegetables and meat. Today I am sharing the veg fried rice recipe in which steamed rice is stir fried and mixed with sauted vegetables like green peas, carrot, cabbage etc. I usually prefer to use the left over rice to make fried rice. Fried rice is in itself a complete dish but many people love to have it with cucumber raita, bondi raita or with curd. Let start with the recipe..
Ingredients :
- 1 cup basmati rice
- 1/4 cup carrot (finely chopped)
- 1/4 cup cabbage (finely chopped)
- 1/4 cup matar (green peas)
- 1 small onion (finely chopped)
- 1 tbsp chopped garlic
- 1 tsp vinegar
- 2-3 tsp soya sauce
- 1 tsp oil to cook rice
- 2 tbsp oil
- pepper to taste
- salt to taste
Method :
- Rinse and soak basmati rice for 15 minutes and cook in 1 and half cup of boiling water and a tsp of oil. Once cooked remove from flame and fluff it with a fork and keep aside.
- Heat oil in a pan or wok and add chopped garlic and saute till the raw aroma disappear.
- Now add the chopped onions and suate till they become translucent.
- Now add the carrot, cabbage, green peas and saute on a high flame and keep stirring continuously. ( To maintain the crunchiness of vegetables cook on high flame.)
- Now add the steamed rice or left over rice, soya sauce, vinegar, salt and pepper to taste and mix well.
- Veg fried rice is ready to be served with raita or curd.
