So many times we have cooked rajma masala in the traditional way but to give it a twist I have added eggs in it which is full of nutrition. Lets start with the recipe..
Ingredients :
- 2 cup boiled Rajma (Kidney Beans)
- 2 Eggs
- 1 Onion (Finely chopped)
- 2 Tomatoes (Finely chopped)
- 1 tbsp Ginger Garlic paste
- 1 tsp Cumin seeds
- 1/2 tsp Turmeric powder
- 1 tsp Red Chili powder
- 1 tsp Coriander powder
- 1 tsp Garam masala
- Salt to taste
- 2 tbsp Oil
- Fresh chopped coriander leaves for garnishing
Method :
- Heat oil in pan and add cumin seeds.
- When cumin seeds starts crackling add ginger garlic paste and suate till it becomes golden brown.
- Now add chopped onions and cook till it is translucent.
- Add tomatoes, turmeric powder, red chili powder, coriander powder and cook till the oil separates from masala.
- Now add the boiled rajma and 1 cup water. Mix well. Add garam masala powder and cook for 2-3 minutes.
- Add the eggs and stir continuously so that eggs will combine with rajma well. Cook till all the moisture evaporates from eggs and eggs are done properly.
- Serve hot with paranthas or roti.
