Pav Bhaji Recipe

Pav bhaji is one of the famous street foods of Mumbai. Traditionaly bhaji is prepared with mashed potatoes. To make it more healthier sometimes we add green peas, capsicum, cauliflower, carrot etc. In my recipe I have used pumpkin and carrot along with potatoes. Kids usually don’t like pumpkin but they will love it in this recipe.

Ingredients :

  • 1 1/2 cup Potatoes (Peeled and diced)
  • 1 cup Pumpkin (Peeled and diced)
  • 1/2 cup Carrot (Peeled and diced)
  • 2 Onions (Finely chopped)
  • 2-3 Tomatoes (Finely chopped)
  • 1/2 tsp Turmeric powder
  • 1 tsp Red Chili powder
  • 1/2 tsp Garam Masala powder
  • 1 or 2 tsp Pav Bhaji Masala
  • Salt to taste
  • 2 tbsp Butter
  • 1 tbsp Oil

Method :

  • Pressure cook pumpkin, potatoes, carrot along with 1/2 a cup of water upto 3-4 whistle.
  • When the pressure is released mashed the vegetables with the help of potato masher or with the help of back of spoon.
  • Now heat oil and butter together in a pan. Add finely chopped onion and saute till they become translucent.
  • Add chopped tomatoes, turmeric powder, red chili powder, garam masala, pav bhaji masala, salt to taste and cook till the oil separates from masala.
  • Now add little bit of water and cook on low flame for 1-2 ┬áminutes.
  • Add the mashed vegetables mix well and cook for 5-7 minutes on low flame.
  • If the bhaji becomes dry add some water.
  • When done, garnish with coriander leaves and serve with chopped onions.
  • While serving, add butter to the bhaji and serve with buttered pavs.
