Nargisi Kofta – Vegetarian Recipe

Nargisi koftas are basically meat balls which are prepared with a mixture of ground meat, rice and leeks served with gravy. But here is Nargisi Kofta recipe for all vegetarians. Deep fried vegetable koftas served with a typical onion based gravy.

Ingredients for Gravy :

  • 2 medium Onion
  • 2 Tomatoes
  • 1 tsp Ginger Garlic paste
  • 2 clove
  • 3-4 Black Peppercorn
  • 2 tbsp Kaju (soaked in half cup of water for 30 minutes)
  • 1 tsp Garam masala
  • 1 Black Cardamom
  • 1 cup Coconut milk
  • 1/2 cup Cream
  • 1 cup Milk
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Red chilli powder
  • Salt to taste
  • 1 tbsp oil

Ingredients for Kofta :

  • 2 cup Boiled Vegetables (carrot, green peas, potato and caulifour)
  • 1 tsp Ginger paste
  • 1/4 tsp Black pepper powder
  • 2 tbsp Maida ( Refined flour)
  • Salt to taste
  • Oil for frying

Method :

  • Mix all the vegetables and mash properly. Divide into equal portion of balls from it.
  • Roll it in refined flour. Heat sufficient oil in kadai and deep fry the vegetable balls till they are golden brown
  • For gravy heat oil in pan, then add ginger garlic paste and saute for a minute.
  • Add clove, black pepper, black cardamom, bay leaves and saute for a minute.
  • Add chopped onions and stir for a minute.
  • Add tomatoes, turmeric powder, red chilli powder, garam masala and cook till all the masala are done.
  • Grind this mixture into paste and add in the same pan.
  • Now add kaju mixture and mix well.
  • Add coconut milk, cream and milk, cook for 3-4 minutes.
  • Add salt to taste, bring it to boil.
  • Add one cup of water, simmer for 5 minutes. Just before serving add koftas.
