Mirchi Vada (Rajasthani Mirchi Vada) Recipe

Mirchi Vada is yet another Rajasthani dish which is served as a snack with chutney and hot tea. In this green chilies are filled with potatoes, dipped in gramflour batter and deep fried.

Ingredients :

• 10-12 large Green peppers (Green Chilies)
• 1 cup Besan
• A pinch of Turmeric powder
• Salt to taste
• Water as required
• Oil for deep-frying

For Filling :
• 3 large Potatoes (boiled, peeled and mashed)
• 1 tsp Red Chili powder
• 1 tsp Amchoor powder
• 1 tsp Coriander powder
• 2 tbsp Coriander leaves (finely chopped)
• Salt to taste

Method :

For Filling :

  • Mix potatoes, red chili powder, amchoor powder, coriander powder, finely chopped coriander leaves in a bowl. Keep aside.
  • Potato filling is ready.

For Vada :

  • Wash the green chilies. Pat them dry using kitchen towel.
  • Slit the green chilies, remove seeds and white rib from the chilies.
  • Fill the green chilies with the potato filling.
  • Heat oil in a pan.
  • In the meantime make thick and smooth batter with the besan, turmeric powder and salt to taste.
  • Now dip the filled green chilies in the batter till they are completely covered and drop into the hot oil.
  • Lower the flame to medium and fry till golden brown.
  • Take on absorbent paper with the help of strainer.
  • Serve hot Mirchi Vadas with green chutney or chane ke saag ki chutney or with your choice of chutney.
