Kuttu ki puri is popular during fast. Puris made from the kuttu ka atta and potatoes. You can serve kuttu ki puri with aloo sabzi, cucumber raita. As kuttu generates warmth in your body so it is advisable to consume it yogurt as side dish or raita.

Lets start with the recipe..

Ingredients :

  • 1 cup kuttu ka atta (buckwheat flour)
  • 1 boiled potato (peeled and mashed)
  • sendha namak to taste (rock salt)
  • 1 green chilli (finely chopped) or you can use black pepper powder
  • oil for frying
  • water to knead the dough

Method :

  • Wash and boil the potato. If you already have boiled potato you can use that.
  • Peel and mash the potato and mix with kuttu ka atta.
  • Add salt to taste, black pepper and mix well.
  • Mix it by rubbing between your fingers and thumb until it is incorporated well.
  • Now knead into a tight dough using water. Start with little water at a time.
  • After that divide the dough into equal portions. Make smooth ball and flatten it between your palm.
  • In the meantime heat sufficient oil in a kadai for frying the puris.
  • Work with one disc at a time. Dust it with dry flour very lightly and roll into small circle.
  • (I prefer to to do it with my palms. Apply some oil on your palms and with the help of your palms make small cirlce.)
  • Now check the oil if it is hot, slide one rolled puri carefully. Slightly press in circular motion using spatula, so it will puff up.
  • Once puff turn it on the other side to cook.
  • Take out on the absorbent paper.
  • Serve kuttu ki puri hot or warm.
