Khaman Dhokla

Dhokla is a one of the famous Gujarati food which can be served in the breakfast, as a main course, or as a snack. There are different varieties of dhokla like khatta dhokla, rawa dhokla, khandhavi dhokla, sandwich dhokla etc.  Today I am sharing the khaman dhokla recipe.

Khaman Dhokla


Ingredients :

  • 1 & 1/2 cup Gram flour (Besan) 
  • 1 cup Curd 
  • 1/2 cup Water 
  • 1 tsp Green Chilies (paste) 
  • 1/2 tsp Soda bi carb 
  • 1 tsp Sugar 
  • 1 Lemon Juice 
  • 1/2 tsp Turmeric powder 
  • 1 packet Eno (Lemon flavor) 
  • Salt to taste 

For Tampering : 

  • Few Curry leaves 
  • 1 tsp Mustard Seeds 
  • 2 tsp Oil Coriander leaves (chopped) 
  • 2-3 Green Chilies (vertically slit) 

Method :

  • Mix curd and water together and whisk well.
  • Now in a bowl add besan, curd and water mixture. Mix well and make a smooth batter. The batter should be of thick consistency.
  • Add soda and set aside for 1-2 hours to get it fermented well.
  • After 2 hrs add green chili paste, sugar, lemon juice, turmeric powder, salt to taste to the batter and mix well.
  • Keep the steamer or cooker ready on gas.
  • Grease a baking dish (it should fit in the steamer or cooker).
  • When the water reaches the rolling stage, you can mix the eno to the batter and mix gently, you will see bubbles coming out.
  • Pour the batter into the greased pan and steam for 10-12 minutes or till done.
  • Cool for sometime and cut into big cubes.
  • Heat little oil in a small pan and add mustard seeds, curry leaves, green chilies allow to splutter. Remove and pour it over dhoklas.
  • Garnish the besan dhokla with chopped coriander.
  • Serve with hari chutney.

Note : Add eno just before you pour the batter in the greased plate.
