Egg (Ande) ki Sabji

Ande ki subzi is quick and easy to cook.

Ande ki sabzi

Cooking Time :  15 Minutes                    Serving : 2

Ingredients :

  • 4 boiled Egg
  • 2 medium Onion (Finely chopped)
  • 2 medium Tomatoes (Finely chopped)
  • 1 tsp Cumin seeds (Jeera)
  • 1/2 tsp Red Chili powder
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Coriander powder
  • Salt to taste
  • 2 tbsp Oil
  • Fresh chopped coriander for garnishing

Method :

  • Peel shell from the boiled eggs and cut into 4 slices and keep aside.
  • Heat oil in a pan, add jeera and when it starts spluttering add onions and stir.
  • When onions are pink add tomatoes, chili powder, turmeric, coriander powder, salt to taste and mix well. Cook till oil separates from masala.
  • Now add 1/4 cup of water and bring it to boil.
  • Once it starts boiling add the boiled eggs to the masala and gently mix well.
  • Turn off the gas, garnish with coriander leaves. Egg subzi is ready to serve with bread, roti or rice.
