Ande ki subzi is quick and easy to cook.

Ingredients :
- 4 boiled Egg
- 2 medium Onion (Finely chopped)
- 2 medium Tomatoes (Finely chopped)
- 1 tsp Cumin seeds (Jeera)
- 1/2 tsp Red Chili powder
- 1/2 tsp Turmeric powder
- 1/2 tsp Coriander powder
- Salt to taste
- 2 tbsp Oil
- Fresh chopped coriander for garnishing
Method :
- Peel shell from the boiled eggs and cut into 4 slices and keep aside.
- Heat oil in a pan, add jeera and when it starts spluttering add onions and stir.
- When onions are pink add tomatoes, chili powder, turmeric, coriander powder, salt to taste and mix well. Cook till oil separates from masala.
- Now add 1/4 cup of water and bring it to boil.
- Once it starts boiling add the boiled eggs to the masala and gently mix well.
- Turn off the gas, garnish with coriander leaves. Egg subzi is ready to serve with bread, roti or rice.
