Egg (Anda) Curry Recipe

Everyone knows that egg is rich in protein which is very important for strong bones. Those who don’t not eat meat which is also rich protein can eat eggs. Eggs are super health food and can be prepared in many interesting ways…one of them is Egg Curry.  In this boiled eggs are cooked in onion and tomato based thick curry.

Ingredients :

  • 6 hard boiled eggs
  • 2 medium onion (Roughly chopped)
  • 3 medium tomatoes (Roughly chopped)
  • 2 green chillies
  • 2 tsp garlic paste
  • 2 tsp ginger paste
  • 1tsp Cumin seeds
  • 2 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • Salt to taste
  • Chopped fresh coriander leaves to garnish
  • 3 tbsp Oil

Method :

  • Heat 2 tbps oil in a deep pan and add cumin seeds.
  • When it starts crackling, add ginger and ginger paste, onions. Fry till slightly golden.
  • Now add chopped tomatoes, turmeric powder, red chili powder, coriander powder and cook until oil separates from masala.
  • Use the slotted spoon to remove the masala from the pan and put them in a food processor.  Grind the masala and green chillies into a smooth paste. Try not to add water while grinding, if possible.
  • Heat the remaining oil in the same pan and add the paste you just made to it. Fry for 2-3 minutes.
  • Now add 2 cups of warm water to this masala and bring to a boil on a medium flame.
  • Add garam masala, cumin powder and mix well.
  • Half slit the boiled eggs vertically and add them gently to the gravy. Simmer the flame and cook for 10 minutes or till the gravy is thickened.
  • Turn off the fire and garnish with chopped coriander leaves.
  • Serve hot Egg Curry with rice and a vegetable side dish.
