Dum Aloo Recipe

Ingredients :

  • 10-12 Baby Potatoes (Partly boiled and peeled)
  • 2 Onion
  • 1 cup Tomato puree
  • 2 tsp Ginger Garlic paste
  • 2 Bay leaves
  • Pinch of Heeng
  • 3 Cloves
  • 1 inch Cinnamon stick
  • 1 tsp Cumin powder
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Red Chilli powder
  • 1 tsp Coriander powder
  • 1/2 tsp Garam masala
  • 2 tbsp Yogurt
  • 1 tbsp oil
  • Salt to taste
  • 1 tsp Sugar
  • 4 Green Chillies
  • 4 tbsp Green Coriander (Finely Chopped)

Method :

  • Wash the potatoes and pressure cook them till one whistle.
  • Grind the onions to a smooth paste.
  • Heat oil in a pan and add heeng, cinnamon stick, bay leaves and cloves.
  • Fry till the oil becomes fragrant and then add onion paste, ginger garlic paste.
  • Cook till it becomes golden brown and the oil separates.
  • Add tomato puree, turmeric powder, red chilli powder, coriander powder, garam masala and stir till the oil separates.
  • Add yogurt to the masala and cook for 2 minutes.
  • Add partly boiled potatoes and cook for 5 minutes.
  • Add 2 cup of water, green chillies, sugar, salt to taste and mix well. Cook for ten minutes at low flame.
  • Garnish with chopped coriander and serve hot with chapattis or rice.
