Dal Baati Churma

Ingredients :

For Dal :
• 1 cup Toovar dal
• 1 Onion (chopped)
• 2 Tomatoes (chopped)
• 2-3 Green chillies (chopped)
• 1 tsp Ginger (chopped)
• 1 tsp Garlic (chopped)
• A pinch of asafoetida
• 1 tsp Red chili powder
• 1 tsp Coriander powder
• 1/2 tsp Turmeric powder
• 1/2 tsp Mustard seeds
• 1/2 tsp Cumin seeds
• Ghee (clarified butter) for seasoning
• Coriander leaves finely chopped
• Salt to taste

For the baatis (for 10 baatis) :
• 1 cup whole wheat flour (gehun ka atta)
• 1/2 cup Semolina (rava)
• 2 tbsp Besan (Gram flour)
• 8 tbsp milk
• 4 tbsp melted ghee
• Salt to taste

For Churma : 
• 2 cups Wheat flour (atta)
• 4 tbsp Semolina (rawa/suji)
• 1 cup pure ghee (clarified butter)
• Milk as required
• 3/4 cup powdered sugar
• 1/4 green cardamom powder
• 5 Cashew nuts (chopped)
• 5 Almonds (chopped)
• 5 Pistachio (chopped)

Method :

For Dal:

  • Wash and pressure cook dal with 2 cups of water up to 3 whistle.
  • Heat ghee in a pan. Add mustard seeds, cumin seeds, asafoetida.
  • When they start crackling, add onion, garlic, ginger, green chilies & saute till light brown.
  • Now add tomatoes, red chili powder, coriander powder, turmeric powder, salt to taste and cook till oil separates from masala.
  • Add half a cup of water and bring it to boil. Now add cooked dal and bring it to a boil.
  • Adjust the consistency of dal, if it is thick add little bit of water according to yourself.  Simmer for 2 mins.
  • Garnish with fresh coriander.
 For Baati:
  • Take atta & semolina in a bowl. Add salt, baking powder & half a cup of pure ghee. Mix well.
  • Add sufficient water & knead into a stiff dough.
  • Preheat oven to 180°C.
  • Take lemon sized portions. Press firmly & roll into round balls.
  • Grease a baking tray. Place the baatis on it. Press them slightly.
  • Place tray in preheated oven & bake at 180°C till done. It may take 15-30 mins.
  • Baatis are ready.

For churma:

  • Mix flour & semolina in a bowl. Add half cup of melted ghee and mix well.
  • Add milk as required & knead into a stiff dough.
  • Divide dough into 12 lemon sized balls.
  • Heat sufficient ghee in a kadhai, deep-fry balls on medium heat, till they are light brown.
  • Drain and place on an absorbent paper & cool. Coarsely grind wheat balls in a mixer.
  • Add powdered sugar, cardamom powder, cashew nuts, almonds, pistachio & mix.
  • Churma is ready to serve.

Serving:

  • Take a bowl full of pure ghee (clarified butter), brake the baatis a little, soak baatis in ghee.
  • Now take a plate, place baatis in it with hot & spicy dal, sweet churma.
  • Serve hot dal baati with churma.
