Corn rice

Corn rice or corn pulao – is a simple recipe in which corn is the highlight of the dish. In Asia rice is the most widely consumed staple food. There are different ways to prepare rice fried rice, plain rice, matar pulao, corn rice etc. 

Today I am sharing a simple rice recipe with corn kernels and whole Indian spices. You can also prepare with left over rice.

Corn rice

Ingredients :

  • 1 cup basmati rice (or left over rice)
  • 1/2 cup corn krenels
  • 1 bay leaf (tejpatta)
  • 2 small piece of cinnamon stick
  • 2 cloves
  • 1 onion (finely chopped)
  • 1/4 tsp garam masala
  • 2 green chili (finely chopped) optional
  • 1/2 tsp turmeric powder
  • salt to taste
  • 1 tbsp ghee
  • fresh coriander leaves for garnishing

Method :

  • Rinse rice in water thoroughly and soak rice in 2 cups of water
  • Slice the corn kernels from the corn and keep aside.(you can also use canned corns)
  • Heat ghee in a pan over low flame, add bay leaf, cinnamon stick and cloves. when clove starts crackling add finely chopped onions.
  • Saute until onion turns translucent. Add finely chopped green chili (if you are using),  corn kernels and saute for 2 minutes.
  • Add turmeric powder, garam masala, salt to taste and mix well.
  • Now transfer the soaked rice along with water and mix. Bring it to boil over medium flame.B
  • When it starts to boil, reduce the flame to low and cover the pan with a lid. Cook for 10 minutes.
  • Turn off the flame and let it stand for 7-10 minutes. Now open the lid and transfer the corn rice to a serving bowl or rice plate.
  • Corn rice/corn pulao is ready to be served with dal or raita.

Tips :

If you are using left over rice..add cooked rice instead of soaked rice. Mix well, saute for 1 minute and cover the pan with a lid for 5-8 minutes. After that open and transfer the corn rice to serving bowl and serve with dal or raita.
