Choley bhature is one of the popular Punjabi dish. Choley are cooked in onion and tomato based curry, and served with fried Indian bread called bhature.

Ingredients :
For Bhature:
- 2 Cup Maida
- 1/2 tsp Baking powder
- 1 cup Yogurt
- Salt to taste
- Oil for frying + 1 tbsp oil
For Choley:
- 1 cup Kabuli Chana
- 2 medium Onion (Finely chopped)
- 2 Tomato (Finely chopped)
- 6-7 Garlic cloves (Finely chopped)
- 1 tsp Cumin seeds
- 1/2 tsp Turmeric powder
- 1/2 tsp Red chilli powder
- 1 tsp Coriander powder
- 1/2 tsp Garam masala
- 1 tsp roasted Cumin powder
- 2 tbsp oil
- Salt to taste
- 2 Tea bags
Method:
For Choley
- Pressure cook the Kabuli chana with the tea bag for 3 whistles until they are soft . Drain and keep aside. Discard the tea bag.
- Heat the oil in a pan, add the cumin seeds.
- When the seeds crackle, add garlic and sauté till the raw aroma disappear.
- Add onion and cook till it is golden brown.
- Add the tomato, turmeric powder, chili powder, coriander powder, garam masala, salt to taste and sauté till the oil separates from masala.
- Add the Kabuli chana and 1 cup of water, mix well and cook for 5 minutes.
- Now add roasted cumin powder and cook for another minute and remove from flame.
For Bhature
- Combine the flour,1 tbsp oil, salt, baking powder and knead into a firm dough. If you find the yogurt is not enough for kneading the dough add little bit of water.
- Knead the dough very well till it is smooth.
- Cover with a wet muslin cloth and rest the dough for 1 hour.
- Take a small ball of dough and roll out into circles .
- Deep fry in hot oil till the bhaturas puff up and both sides are golden brown.
- Serve hot with the choley, favourite pickle and sliced onions.
