Chana Dal with Mixed Vegetables

Ingredients :

  • 1 cup Chana Dal (soaked for half an hour in 2 and half cup of water)
  • 1 Potato (Peeled and diced)
  • 4-5 Cauliflower florets
  • 1 small Brinjal (Eggplant)
  • 1 cup Spinach (Blanched and finely chopped)
  • 1 Onion
  • 2 Tomatoes
  • 7-8 Garlic cloves (Finely chopped)
  • 1 tsp Cumin seeds
  • 1 tsp Mustard seeds
  • 8-10 Kari patta
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Red Chili powder
  • 1 tsp Coriander powder
  • Salt to taste
  • 2 tbsp Oil

Method :

  • Wash and soak dal in 2 and half cup of water. Drain and pressure cook dal in 2 and half cup of water along with 1/4 tsp of turmeric powder, salt to taste.
  • When the pressure is released mash slightly with the back of spoon and mix well.
  • Heat oil in a pan, add cumin seeds.
  • When seeds start crackling add chopped garlic and saute until the raw aroma disappears.
  • Now add onion and stir for 2 minutes.
  • Add tomatoes remaining turmeric powder, red chili powder, coriander powder and cook until the oil┬áseparates from masala.
  • Add potato, brinjal, cauliflower, salt to taste (make sure do not add too much salt as we have already added salt in dal) and mix well. Cook till vegetables start getting soft.
  • Add chopped spinach (palak) and mash the vegetables with the help of potato masher. Cook for 2 minutes.
  • Now add the cooked dal and 1/2 cup of water (you can adjust water according to yourself), mix well and cook on low flame for 1-2 minutes. Adjust salt according to your taste.
  • Now heat 1 tsp oil in a tadka pan, add mustard seeds, kari patta. When they start crackling transfer this tadka to the dal and cover with a lid for 1 to 2 minutes so that flavour comes into the dal.
  • Serve hot with steamed rice or chapatti.
