Baingan ka Bharta

Ingredients :

  • 2 medium Baingan (Brinjal)
  • 3 medium Onion (Finely sliced)
  • 2 Tomatoes (Finely chopped)
  • 1 tsp Cumin seeds
  • 5-6 Garlic cloves (Finely chopped)
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Red Chili powder
  • 1 tsp Coriander powder
  • Salt to taste
  • 2 tbsp Oil
  • Finely chopped coriander leaves for garnishing

Method :

  • Roast the baingan on gas at low flame until it is cooked properly and the skin is charred. Cool, peel and mash the baingan.
  • Heat oil in a pan, add cumin seeds to it.
  • When the cumin seeds starts crackling add chopped garlic. Cook until the raw aroma disappears.
  • Add onions and saute till onion becomes translucent.
  • Now add tomatoes, turmeric powder, red chili powder, coriander powder, salt to taste and cook until the oil separates from masala.
  • Now add the mashed baingan and mix well. Cook for 4-5 minutes at low flame.
  • Garnish with chopped coriander and Baingan ka Bharta is ready to be served with chapatis.
