Anda Palak Bhurji

Anda Bhurji is a dish popular in north and western India. It is very simple and easy to cook. To make it more nourishing I have added spinach.

Serving : 2          Cooking Time : 10 minutes

Ingredients :

• 4 Eggs 1 Onion (Finely chopped)
• 1 Tomato (Finely chopped)
• 20-25 Spinach leaves (Finely chopped)
• 1/4 tsp Turmeric powder
• 1/2 tsp Red chilli powder
• 1/4 tsp Coriander powder
• Salt to taste
• 1 tbsp Oil

Method :

  • Heat oil in a pan. Add chopped onions to it.
  • Saute onions till it gets translucent.
  • Add chopped spinach and cook for 2-3 minutes.
  • Now add tomato, turmeric powder, red chilli powder, coriander powder and cook until oil separates from masala.
  • Break eggs into a bowl and whisk lightly. Pour this into pan and cook stirring continuously till almost dry.
  • Serve hot with bread toast.
