Aloo Gajar Matar ki Subzi

Aloo Gajar Matar subzi is made regularly in every north Indian home during winter season.  It is very healthy and easy recipe which can be served with rotis, paratha or naan.

Ingredients :

  • 2 Carrots (Peeled and diced)
  • 3 Potatoes (Peeled and diced)
  • 1/2 cup Green peas
  • 1 Onion (Finely chopped)
  • 1 Tomato (Finely chopped)
  • 6-7 Garlic cloves (Finely chopped)
  • 1 tsp Cumin seeds
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Red Chili powder
  • 1 tsp Coriander powder
  • Salt to taste
  • 2 tbsp Oil

Method :

  • Heat oil in a pan. Add cumin seeds.
  • When they starts crackling add chopped garlic and saute until raw aroma disappears.
  • Add onion and cook till it becomes translucent.
  • Add tomato, turmeric powder, red chili powder, coriander powder, salt to taste and cook till oil separates from masala.
  • Add carrots, potato, peas and mix well so that all the masala coats well.
  • Stir occasionally until all the veggies are cooked properly.
  • Your Aloo Gajar Matar is ready to be served with hot rotis.

Tip : If you find veggies are sticking to the bottom of the pan sprinkle some water and stir.
