Sandwich Dhokla

I have already posted khaman dhokla.. and today I am sharing sandwich dhokla. Basically it is a layer of two dhoklas and mint chutney is spread between the layers. Lets start with the recipe..

Ingredients :

For chutney 

• 1 cup Coriander
• 2-3 Green Chili
• ½ cup Mint Leaves
• Ginger
• ½ tsp Cumin Seeds
• Salt
• 1 tsp Lemon Juice

For Khaman Dhokla

  • 1 & 1/2 cup Gram flour (Besan) 
  • 1 cup Curd 
  • 1/2 cup Water 
  • 1 tsp Green Chilies (paste) 
  • 1/2 tsp Soda bi carb 
  • 1 tsp Sugar 
  • 1 Lemon Juice 
  • 1/2 tsp Turmeric powder 
  • 1 packet Eno (Lemon flavor) 
  • Salt to taste 

For Tampering : 

  • Few Curry leaves 
  • 1 tsp Mustard Seeds 
  • 2 tsp Oil Coriander leaves (chopped) 
  • 2-3 Green Chilies (vertically slit) 

Imli Chutney

2 tbsp grated coconut

Method :

For Chutney

Combine all the ingredients, blend it in a blender and make a smooth paste, keep aside, use water as required while blending.

For Dhokla

  • Mix curd and water together and whisk well.
  • Now in a bowl add besan, curd and water mixture. Mix well and make a smooth batter. The batter should be of thick consistency.
  • Add soda and set aside for 1-2 hours to get it fermented well.
  • After 2 hrs add green chili paste, sugar, lemon juice, turmeric powder, salt to taste to the batter and mix well.
  • Keep the steamer or cooker ready on gas.
  • Grease a baking dish (it should fit in the steamer or cooker).
  • When the water reaches the rolling stage, you can mix the eno to the batter and mix gently, you will see bubbles coming out.
  • Pour the batter into the two greased pan and steam for 10-12 minutes or till done.
  • Take out the plates from the steamer and unmould after 2-3 minutes.
  • Now apply mint chutney on one dhokla (on the rough side).
  • Place other dhokla over it(keep the rough side over the chutney)
  • Heat little oil in a small pan and add mustard seeds, curry leaves, green chilies allow to splutter. Remove and pour it over the sandwich dhokla.
  • Cut the sandwich dhokla in squares or diamonds pieces.
  • Garnish the dhokla with tamarind chutney, chopped coriander and grated coconut.
  • Your sandwich dhokla is ready to be served.
