
Like any other child my son also love potatoes. I cook crispy potato fry for him with less spices so that he can finish it completely and they are so easy and quick to prepare. I have given a twist to potatoes by adding dried mint leaves.
Ingredients :
• 5-6 Potatoes (Peeled and sliced into wedges)
• 2 tbsp Refined flour (maida)
• 1 Onion (Finely chopped)
• 2 tbsp Tomato ketchup
• 1/4 tsp Red Chili powder (if you like spicy add more red chili powder)
• 1 tsp Dried mint leaves powder
• Salt to taste
• Oil for frying
• Chopped coriander leaves for garnishing
Method :
- Wash, peel and cut the potatoes into wedges.
- In the meantime heat sufficient oil in a kadai to fry potatoes.
- Put the potato wedges in a bowl, sprinkle some salt, refined flour and mix well without adding any water. Make sure the maida coats the potatoes well.
- Now fry potatoes till golden brown in small lots.
- In the meantime till potatoes are done properly heat 1 tbsp oil in a pan.
- Add chopped onion and cook till they become translucent.
- Now add tomato ketchup, salt to taste, red chili powder and mix well.
- Now add the fried potatoes to this masala and mix well.
- Now sprinkle mint leaves powder, chopped coriander and mix.
- Crispy potato fry are ready to be served hot.
