Shrikhand is an Indian sweet dish made of yogurt. It is one of the main desserts in Maharashtrian cuisine and Gujarati cuisine. There are different variations of shrikhand served in Maharashtra as well as in Gujrati cuisine…one of them is kesar shrikhand.
Ingredients :
- 1 kg thick curds (dahi)
- 3/4 cup powdered Sugar ( or according to taste)
- A few saffron (kesar) strands
- 1 tbsp warm milk
- 2 tsp Cardamom (elaichi) powder
- Pistachio slivers for garnishing
- Almond slivers for garnishing
Method :
- Hang the curd in a muslin cloth in a cool place for approximately 3 hours until all the liquid (whey) has drained off.
- Dissolve saffron into the warm milk and keep aside.
- Mix together the hung curds, sugar, saffron mixture and cardamom in a bowl and churn using a hand blender.
- Serve garnished with slivers of pistachios and almonds.
