
Kulfi is a traditional ice cream dessert in which milk is flavored with pista, badam, kesar on low flame to get your choice of flavors and then set to be frozen. Today I am sharing the recipe of kesar pista kulfi.
Ingredients :
- 1 litre Milk 15-20 Pistachios coarsely ground
- A pinch of Saffron (kesar)
- 1/4 cup grated Khoya/mawa
- Sugar as required
Method :
- Heat the milk in a thick bottom pan. When the milk begins to boil, add saffron, lower the heat and simmer, stirring, till the milk is reduced to half.
- Add pistachios and mix well. Cook for three to four minutes while stirring continuously.
- Now add sugar according to your taste and mix well till sugar dissolves.
- Add the khoya and mix well. Turn off the gas and let the mixture cool.
- Pour into individual kulfi moulds and place them in the freezer to set.
- Once frozen, demould and serve immediately. (It will take around 5-7 hrs to set).
