Gond ke Laddu

Gond ke laddu are very popular in north India. Gond ke laddu are usually had in the winters and they are also given to the new mothers because it gives heat to our body. These laddus are high in energy as it contains lots of dry fruits, so the new mothers who are breastfeeding is very good for them to get the instant energy. Traditionally these laddus are taken as breakfast with a glass of warm milk.

Gond ke Laddu

Ingredients :

  • 1/2 Kg Wheat flour
  • 1/2 Kg Ground sugar (boora) (Adjust the sugar according to your taste)
  • 350 gms Ghee (Clarified butter)
  • 100 gms Lotus seeds (makhane)
  • 50 gms Gond (Edible gum)
  • 50 gms Almonds(coarsely ground)
  • 50 gms Cashew nuts(coarsely ground)

Method :

  • Coarsely ground almonds and cashew in mixer separately and keep aside.
  • Heat sufficient amount of the ghee in heavy bottom kadai and fry lotus seeds until lightly brown.  Take out from kadai with the help of strainer and coarsely ground them when  they are still warm. Keep aside.
  • Now deep fry the gond in the same kadai, one tablespoon at a time till the pieces puff up. Now take out on dish and coarsely ground them when they are still warm and keep aside.
  • Now add the wheat flour into the same kadai and roast the wheat flour while stirring continuously on a medium flame till it turns light golden brown. Let it cool for a little while.
  • Now add coarsely ground almonds, cashew, lotus seeds, gond, sugar and mix well.
  • Now heat the remaining ghee and gradually add to the flour mixture till you find that there is no difficulty in shaping the laddus.
  • Take small portion of mixture in your palm and shape each portion into laddus.
  • Store in an airtight container.

Tip :

1. Make sure you will shape the laddus when the mixture is still warm. Don’t let it cool completely.

2. Don’t add the remaining ghee at one go otherwise it will effect the mixture consistency.
