Eggless Vanilla cake

Eggless vanilla cake is a very simple soft and spongy cake. For cake lovers who do not eat egg can have this soft and spongy delicious cake. It is one of the perfect base that one can use for layer cakes. Lets start with the basic eggless vanilla cake recipe

Eggless Vanilla cake

Ingredients :

  • 250 gms refined flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 tin condensed milk
  • 1/2 cup sugar
  • 100 gms butter
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • icing sugar for dusting
  • colourful sprinklers

Method :

  • Preheat the oven to 180 degree Celsius. Grease the 8 inch square pan with butter and dust with some flour and keep aside.
  • Cream the butter and sugar until light and fluffy.
  • Add a teaspoon of vanilla extract and one tin of condensed milk to the creamed butter sugar mixture. Beat well for a couple of minutes.
  • Sift the dry ingredients to remove any lumps in the flour and to distribute the raising agents uniformly in the mixture.
  • Add the flour mixture slowly to the prepared mixture of condensed milk until a thick batter is formed.
  • Measure 1/2 cup of milk. Use the luke warm milk and add to the batter and mix well to combine. Make sure to avoid lumps in the mixture.
  • Pour the mixture in the prepared grease pan and bake for 30-35 minutes or till a toothpick inserted in the middle comes clean.
  • Let it cool in the pan for 5 minutes. Then loose the sides of the pan using knife and then remove it (upside down) on the wire rack. It is important to let it cool completely before you put the frosting on it.
  • Dust the vanilla cake with icing sugar and colourful sprinklers.
  • Treat your loved ones with eggless vanilla cake.

Tip : If your cake start getting brown quickly, cover with a aluminium foil to avoid the burning.
