Beetroot halwa is a tasty Indian desert. It is prepared from grated beetroot simmered in milk in the similar way like gajar ka halwa.

Ingredients :
- 2 cup grated Beetroot
- 1 cup sugar
- 1/2 cup ghee (clarified butter)
- 1/2 cup cream
- 1 cup Milk
- 1 tsp Cardamom powder
- 2 tsp sliced Almonds (Badam)
- 1 tsp Kaju (Cashewnuts)
- 1 tsp Kismis (Raisin)
Method:
- Peel, wash and grate beetroots.
- In a heavy bottomed pan, heat a tablespoon of ghee and roast the cashewnuts, remove and keep aside.
- Now heat the remaining ghee add grated beetroots and stir for 5 minutes.
- To this add the milk and allow the mixture to come to boil.
- On low flame cook the beetroot in milk until all the milk gets absorbed while continuously stirring.
- Add cream, mix well and cook for 2-3 minutes.
- Add sugar and cook for another 5 minutes or till the water evaporates
- Add cardamom powder, fried cashewnuts, raisins and mix well. Cook until halwa is totally dry and starts to leave ghee.
- Garnish with almonds and serve hot.
