Misal pav – a traditional Maharashtrian breakfast dish. It is a healthy dish specially if it is served with whole wheat pav. In this sprouts are cooked with tangy tomatoes and onions. The taste of misal ranges from mild to extremely spicy.

Ingredients :

For the misal

  • 1/2 cup moong sprouts
  • 1/2 cup moth sprouts
  • 1 large potato (peeled and diced)
  • 1 large onion (finely chopped)
  • 2 large tomatoes (finely chopped)
  • 1 tsp jeera (cumin seeds)
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1 tbsp goda masala/
  • 1.5 tsp seedless tamarind soaked in ⅓ or ½ cup water or 2 to 3 kokums
  • ¾ to 1 cup water or as required
  • 3 tbsp oil
  • Salt to taste

For Serving 

  • 1/2 cup mixed farsaan
  • 1/2 cup finely chopped onions
  • 4 tbsp finely chopped coriander (dhania)
  • 8 -10 laddi pavs
  • 4 lemon wedges

Method :

  • Rinse the sprouts in running water.
  • Put the sprouts and potato cubes in pressure cooker and add enough water to cover the sprouts. Add turmeric powder, salt and mix well. Pressure cook for 2-3 whistles.(If you are using mixed sprouts add little more water)
  • In a small bowl soak the tamarind in ½ cup warm water for 10 to 15 minutes.
  • Squeeze the tamarind and extract the pulp. keep the tamarind pulp aside.
  • Now heat oil in another pan.
  • Add cumin seeds and when they start crackling add the chopped onions and saute till translucent.
  • Now add chopped tomatoes, turmeric powder, coriander powder, red chili powder and goda masala.
  • Cook till the oil separates from masala.
  • Now add the tamarind pulp.
  • Saute till the raw aroma of the tamarind goes away.
  • Now add the cooked sprouts and potatoes to the tamarind pulp masala.
  • Stir and add ¾ to 1 cup water or more water if required
  • Season with salt and simmer the usal for 8 to 10 mins on a low flame with occasional stirring.
  • Switch off the gas.

Assembling the misal pav

  • Just before serving pour 1/4 of the misal in a serving bowl, sprinkle 2 tbsp of mixed farsaan, 2 tbsp of onions and 1 tbsp of coriander over it.
  • Repeat with the remaining ingredients to make 3 more servings.
  • Serve immediately with pavs and lemon wedges.
