Penne with Pumpkin Sauce recipe


Pumpkin is incredibly rich in antioxdants, vitamins and minerals but low in calories. There are many creative ways pumpkin can be incorporated into your diet, including desserts, soups, salads, preserves and even as a substitute for butter. Today I am sharing a recipe of pasta in which i have used pumpkin.

Like any other child my son also love to have pasta. So to give him nutrition as well as his favorite food I used pumpkin to make this recipe. Lets start with the recipe..


 Ingredients :

  • 2 cups penne or other short pasta
  • 1/2 cup pumpkin puree (boil the pumpkin and make puree )
  • 1 small onion (finely chopped)
  • 1 tomato (make puree)
  • 1 tbsp olive oil
  • Salt to taste
  • Black pepper to taste

Method :

  • Cook penne pasta in a large pot of boiling salted water until al dente. Drain and keep aside.
  • In a non stick pan, heat oil over a medium flame.
  • Add chopped onion and saute till it become translucent.
  • Add tomato puree and saute for another 1 minute.
  • Now add pumpkin puree, salt, pepper and mix well.
  • Saute for 2-3 minutes, then add cooked paste to the sauce and toss to coat.
  • Your penne pasta with pumpkin puree is ready to serve.
